Delicious Expectations

The maples have been tapped! Volunteers and staff tapped Riveredge Maples on February 26, beginning the 4-6 week sap flow. Even before the robins come, sap flowing into buckets announces the coming of spring.


Pure maple syrup is a delicous half of the pancake duo, but I never realized it is also a super food.

The most obvious is that syrup is a natural product with little refining, no additives, dyes, or preservatives. Just deliscious goodness.

The shocker is that syrup is really nutritious.

-Less sugar per tablespoon than honey or corn syrup

-Containes the same concentration of calcium as milk

-Provides trace mineral manganese

-Source of zinc, biotin, niacin, and iron

-Replace white sugar for moist, extra nutritous cake

-Buy local and support your community's economy
 
Maple Wacky Cake
You won't taste the maple, but it will make this chocolate cake wonderfully moist. Frost and enjoy!
 
3 cups unbleached flour
2 cups pure maple syrup
2/3 cup cocoa powder
2 tsp baking soda
2 tbs cider vinegar
2 tsp vanilla extract
1 cup oil
1 1/2 cups water
 
Preheat oven to 350. Mix ingredients together and pour into a non-stick pan. Bake for 20-25 minutes or until toothpick inserted into center comes out clean. 9x13 will need a longer cooking time. Cool, frost, and enjoy!
